how to make dehydrated powders
Making your very own dehydrated powders is super simple and made even easier if you have a good quality food dehydrator. At Commercial Dehydrators, our dehydrating units range from a 16 tray dehydrator, right up to a 60 tray dehydrator, and are all made with premium quality materials and superior features—ensuring a quality product and efficient dehydrating process.
Before starting the dehydrating process you can pre-treat your fruits and vegetables which will help preserve the color, texture and flavor. This is done by dipping them in citric acid or lemon juice, or alternatively, dropping them in boiling water for a couple of minutes, followed by quickly immersing them in a bowl of ice water. This process is optional, and if you’re not too fussed about the coloring of the end result then you can skip this step—but it can also help to speed up the dehydrating time.
After you have washed your fruits and vegetables (or pre-treated them), slice them as thin and as evenly as possible to ensure they all dehydrate at the same time. With leafy greens and herbs, just lay them out in a single layer across the dehydrator trays.
All fruits and vegetables will take different times to dehydrate but both should be completely dry and without any moisture. Fruits will tend to have a leathery texture, whilst vegetables will be hard and brittle. To ensure all the moisture has been removed during dehydration, it’s important to condition the fruits and vegetables before grinding them into a powder. This can be done by placing them into a glass jar for approximately 4-10 days, and if the dehydrated food sticks together or to the glass jar/container when shaken, you will need to put them back in your dehydrator for a little longer and repeat this process.
Following this step, it’s time to grind your dehydrated fruits and vegetables in a food processor, high-powered blender or coffee grinder to create your dehydrated powder. If you notice any larger pieces haven’t blended, simply sift your powder and re-blend any of the larger remaining pieces.
BEST STORAGE SOLUTIONS AND SHELF LIFE
Proper storage is key to preserving the quality and shelf life of dehydrated fruit and vegetable powders. To prevent clumping and caking, it's recommended to place your powders on a paper-lined baking tray and pop them in the oven at 195°C for 15-20 minutes before transferring them to airtight containers or glass jars. This will help to remove any excess moisture and ensure that your powders last for years.
Once your powders are dehydrated and stored in airtight containers, it's important to keep them in a cool, dry, and dark location. This helps to prevent heat, light, and moisture from affecting their quality and flavor. A pantry or cupboard is a great place to store your powders, as long as it's away from direct sunlight or heat sources like the stove or oven.
