- 2 Tbsp. olive oil
- 1 tsp. fresh rosemary, finely chopped
- 1/2tsp. sea salt
- 1/4 tsp. pepper

- Cut tops of beets. Slice beets about 1/8-1/4 inch wide. Use a mandolin if possible.
- Toss beets, olive oil, rosemary, salt and pepper in a bowl until evenly coated.
- Set the dehydrator to 145 degrees. Place trays in dehydrator for 10-12 hours.
