Ingredients
  • 8 cups of mango (about 4 mangoes)
  • 12  tbsp  freshly squeezed lime juice (from about 6 limes)
  • 2 cups applesauce
  • 1/2 cup honey or as needed

Instructions
  1. Wash, peel, and chop the mango.  
  2. In  a  blender,  combine the  mango,  honey, applesauce,  and  freshly  squeezed  lime  and  puree.
  3. Taste  the  blended  mix  and  add  honey  as  needed.
  4. Ensure the mix is not too thick.
  5. Line  the  dehydrator  trays  with  parchment  paper.
  6. Spread  out  a  thin  layer  of  the  mango  mix  on  the dehydrator trays.  
  7. Set  temperature  to  135°F  and  dehydrate  for  12-18  hours. Note that the timing may take up to 20 hours in some cases. But when the leather is done, it would be non-sticky.
  8. Allow the leather to cool and cut into strips before storing them in airtight containers.
