What do you do with that beautiful citrus rind after one has eaten the fruit? You don’t throw it away! Citrus zest is a perfect way to save and utilize any type of citrus rind/peel. It’s a great way to add fresh citrus flavor without the fuss!

  • 1 bag lemons, (oranges or limes)

Instructions
  1. Zest desired citrus fruit; leave the white part of the pith.
  2. Spread zest equally on dehydrator tray lined with parchment paper. Place in your dehydrator and dry at 130°F for 2 hours.
  3. Break zest clumps apart and stir zest to make sure they are drying. Dehydrate for 1 to 2 hours at 130°F.
  4. Store in an air-tight container; in a dark place for up to a year.
