If you're looking to preserve some of the fresh peppers from your garden or the farmers market, drying them is a great solution. You can store the dehydrated peppers in jars or bags and then use them during the rest of the year.

Instructions
  1. Wash jalapenos in cool water and dry with paper towel.
  2. Cut pepper stems off with a sharp knife. Cut in half lengthwise; remove and dispose seeds.
  3. Chop up the peppers then spread on dehydrator trays in a single layer. Dry at 125°F for 12-18 hours or until dry enough.
  4. Pour the dried pepper into a mason jar and cover the lid tightly or store in a freezer bag.
