- 6 Tbsp. lemon juice
- 1 tsp. vanilla extract
- Dash of cinnamon
- 1/4 cup maple syrup

- Place almonds in the food processor and pulse until a flour-like consistency develops.
- Add coconut and process with the ground nuts. Add the lemon juice, (zest if using), vanilla extract, cinnamon and maple syrup.
- Scoop out batter into mini-balls and latten. Place on dehydrator sheets and dehydrate for 8 hours at 115 degrees for a chewy texture.
